Holiday Dressing

Adapted from George Brown College Culinary Arts 1 recipe. Best for individual portions (cupcake size) or for stuffing meat. It would be great in a layer of savoury cake. You could also add duchess potatoes on top and bake for 10 more minutes. Serve with gravy.

Ingredients
  

  • 6 tablespoons butter
  • 2 red onions diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper
  • 6 celery stalks peeled and diced
  • 9 dried apple slices chopped
  • 5-7 slices of bread torn into 1-inch pieces
  • 3 basil sprigs minced
  • 3 parsley sprigs minced
  • 1 teaspoon dried sage
  • 1-1½ cup white wine
  • 1 container (125g) blue cheese

Method
 

  1. Preheat oven to 350°F.
  2. Melt the butter over medium heat in a frying pan. Add the onions and season with salt and pepper. Cook until sweated, approximately 5 to 10 minutes.
  3. Add the celery and dried apple, cook for another 5 minutes, and season with salt and pepper.
  4. Transfer the mixture to a large bowl. Add the bread, herbs, white wine, and blue cheese
  5. You can make this ahead of time and place in the refrigerator until you are ready to cook.
  6. Press the dressing into cupcake tins or small baking pan and bake at 350°F for 15 to 20 minutes, or until the top starts to get crispy. Serve with gravy
  7. If baking from the refrigerator, bake for 40-45 minuted
    For fluffy or loose stuffing, transfer to a serving bowl and fluff with a fork before serving.
