Grandma Hartung’s Sweet Harvest Puff

She originally called it Turnip Puff, but it works great with all types of sweet harvest veggies! Turnip, Carrot, Pumpkin or Squash. It was always part of every Thangiving meal at grandmas.
Course: Side Dish

Ingredients
  

  • 4 cups cooked turnip, squash, carrot, or pumpkin
  • 1/4 cup butter
  • 1/3 cup brown sugar
  • 1/2 cup old cheddar cheese (optional) optional
  • 2 eggs
  • 2 teaspoon baking powder
  • 1 cup bread crumbs
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Method
 

  1. Preheat oven to 375℉.
  2. Using a food processor, chop vegetable of choice until smooth, about 5 pulses.
  3. Add the remaining ingredients to the food processor and mix until combined, about 20 seconds.
  4. Transfer mixture to a caserole dish. Bake uncovered 35-40minutes, until the top is slightly browned.
  5. You can make ahead of time and keep in the refrigerator forum to 24 hours before you bake. If baking from cold, make for 40-45 minutes
