Christmas Morning Dad Saver

This recipe is adapted from the Best of Bridge Classic - Wife Saver. We've made it for veggie dads.

Ingredients
  

  • 16 slices (1 loaf) whole wheat bread
  • 1 package sliced veggie meat or sliced mushrooms or peppers
  • 2-4 cups old cheddar cheese shredded
  • 7 eggs
  • 1 teaspoon pepper
  • 1 teaspoon dry mustard or 1 tablespoon of dijon mustard
  • 1/4 cup nutritional yeast
  • 1 onion minced
  • 1 green pepper minced
  • 2 teaspoon worcestershire sauce or soy sauce
  • 3 cup milk
  • 1 teaspoon franks hot sauce
  • 1/4 cup butter
  • 1-2 cups Special K or crushed cornflakes

Method
 

  1. Butter a 9 × 13 inch (23 × 33 cm) glass baking dish.
  2. You can also make this in a slow cooker - cook on high for 2 hours. Before serving, add Special K and butter and broil in the oven for 10 minutes until the top is golden brown.
  3. Place 8 slices of bread in the dish, cutting pieces as needed to cover the bottom completely.
  4. Cover bread with sliced veggie meat or mushrooms and top with cheese
  5. Cover with the remaining bread slices.
  6. In a bowl, beat eggs and pepper. Add mustard, nutritional yeast, onion, green pepper, Worcestershire sauce, milk, and hot sauce.
  7. Pour mixture over bread.
  8. Cover and refrigerate overnight.
  9. In the morning, melt the butter and pour over the top.
  10. Cover with crushed Special K or cornflakes.
  11. Bake uncovered at 350°F (180°C) for 1 hour.
  12. Let stand 10 minutes before serving.
