Honey Apple Cake

I made this cake during my first year working at Baycrest to celebrate my first Rosh Hashanah in September. It's a great fall recipe with apples and warm spices. If you do not have honey, you can use molasses for a similar result.

Ingredients
  

Wet ingredients
  • 3 eggs
  • 1¼ cup vegetable oil
  • 1 cup white sugar
  • 1/2 cup honey or molasses
  • 1½ teaspoon vanilla
  • 4 (2 cups) apples peeled and shredded
Dry ingredients
  • 3 cup all-purpose flour
  • 1½ teaspoon cinnamon
  • 1½ teaspoon allspice
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt

Equipment

  • loaf pan or bunt cake pan

Method
 

  1. Preheat oven 325°F.
  2. In a large bowl, mix wet ingredient with a whisk until combined.
  3. Add dry ingredients and stir with a spoon or spatula until combined and no flour is visible.
  4. Pour batter into a buttered bread loaf or bunt cake pan. Bake for 75–90 min, until a toothpick comes out clean.
