Quick Cinnamon Buns

Ingredients
  

Dough
  • 1¼ cups soy milk
  • 2 tablespoon white sugar divided
  • 4 teaspoon rapid-rise yeast
  • 2¾ cups all-purpose flour
  • 2½ teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoon butter melted, divided
Filling
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 tablespoon ground cinnamon
  • 1/8 teaspoon salt
  • 2 tablespoon butter melted
  • 1 teaspoon vanilla
Glaze
  • 1 cup icing sugar
  • 1/2 block cream cheese
  • 2 tablespoon butter melted
  • 2 tablespoon soy milk
  • 1/2 teaspoon vanilla

Method
 

Make the Dough And Filling
  1. Grease a 9-inch spring-form cake pan. Warm 1/4 cup of the milk in the microwave for 15 seconds. Stir in 1 tsp of the sugar and the yeast. Let it stand until foamy/bubbly, about 5 minutes.
  2. Meanwhile, prepare the filling:
 Mix the brown sugar, granulated sugar, cinnamon, and salt. Stir in the melted butter and vanilla until the mixture looks like wet sand. Set aside.
  3. In the bowl of a stand mixer, add flour, baking powder, salt, and the remaining sugar. Stir in 2 tbsp melted butter, the yeast mixture, and the remaining 1 cup milk. Using the dough hook, mix for 2-3 minutes, until a smooth ball form.
Shape the Dough & Rise
  1. Roll the dough into a 12 x 9-inch rectangle with the long side facing you. Brush with 2 tbsp melted butter, leaving about a 1/2-inch border along the far edge. Spread the filling evenly over the dough and press it in lightly. Roll the dough tightly into a log and pinch the seam closed. Place seam-side down and cut into 8 equal pieces. Arrange them in the prepared pan with 1 bun in the center and the others around it. Brush the tops with the remaining 2 tablespoon melted butter.
  2. Cover loosely with greased plastic wrap and let rise for 30 minutes.
Bake
  1. Preheat oven to 375°F with the rack in the lowest position. Bake until the edges of the dough are slightly browned, about 30 minutes, rotating the pan halfway through.
  2. Cool in the pan for 5 minutes, then invert onto a plate, remove the pan and parchment.
Glaze
  1. As the buns cool, make the glaze. Place all ingredients into a magic bullet and blend until smooth, about 20 seconds. Pour over the buns and serve.
