Phyllo Pastry Harvest Spring Rolls
Great app for harvest dinner, serve with a Whipped feta dip. The filling can also be sided for a phyllo-pastry layered cake. make ahead filling.

- In a large skillet or frying pan over medium-high heat, add butter. Once melted, add mushrooms, water and salt. Stir often until mushrooms release their juices and start to brown, about 8 minutes.
- Add onion to the pan and stir often until onions becomes translucent, about 7 minutes.
- Add red wine and scrape the bottom of the pan to remove any stuck bits.
- Add carrots and squash/pumpkin. Reduce to medium heat and cover with a lid. Stir occasionally and cook until squash is fork tender, 15-20 minutes.
- Stir in sage and remove from the heat.
- Add everything from the pan into a food processor, plus the almonds or sunflower seeds, and 2 tablespoons of olive oil. Pulse 10 times, until everyone is well combined, but chunky.
For a nuttier flavour, you can toast your ground almond or sunflower seeds before adding to the pan. In an 350℉ oven for 6-10 minutes, until they are fragrant and slightly browned.
You can place the filling in a zip-lock bag in the refrigerator for up to 2 days.
Assemble the Spring Rolls
- Preheat oven to 350℉
- Take 1 phyllo sheet and cut in half. Place it on a clean counter.
- Cut the corner from your zip-lock bag and pipe a 3-inch tube of filling to the middle/end of phyllo.
- Fold in both sides, like a burrito. Brush with olive oil to help glue it shut. They will look a bit messy but that is ok!
- Place the spring roll into parchment paper-lined baking sheet.
- Brush with the tops with olive oil.
- Bake until golden brown, 30–45 min.
