Homestyle Gravy

Adapted from Breaking up with Dairy – use as grits or base of cream soup. Dip for biscuits or gravy over potatoes.

Ingredients
  

  • 3 tablespoon olive oil
  • 1 small white onion, minced
  • 1 teaspoon salt
  • 4 cloves garlic, minced
  • 4 cup soy milk, unsweetened
  • 1/4 cup almond flour
  • 2 tablespoon cornstarch
  • 1½ teaspoon white pepper
  • 1/2 teaspoon nutmeg, ground
  • 1/2 teaspoon sage, ground
  • 1/2 cup walnuts, chopped (or cooked lentils)
  • 1/4 cup chopped parsley (optional)
  • 1 cup water (optional)

Method
 

  1. Using a large pan over medium heat, onion in olive oil and add 1 tsp of the salt. Cook until translucent, 5-7 minutes. Add garlic and cook for 1 minute more.
  2. Meanwhile, make a cornstarch slurry by adding corn starch to 1/4 cup of the soy milk. Mix with a fork until cornstarch is dissolved.
  3. Add the almond flour to the pan and stir. Then add the rest of the soy milk, cornstarch slurry, and remaining spices. Whisk until combined, the turn heat to medium high to bring to a boil while continuously whisking. Once boiling, reduce head to medium, low and add walnuts. The cause should be apple sauce thick by now.
  4. Simmer while stirring often for 5-7 minutes, until walnuts start to soften. If you want the sauce to be thinner, add 1/4 cup of water at a time until you have the desired consistency.
